Does anyone else have children who are ready to eat the moment they open their eyes in the morning and must henceforth announce it exuberantly beside your once peacefully snoozing head? Now don’t get me wrong, there is a part of me that loves the vim and vigor they bring to each day. I kinda wish I had the same energy as I got going, but alas, this pregnant mama with 3 littles and a deep love for my bed, struggles to ‘rise and shine’ immediately and get breakfast going. So, the other day I decided to attempt an overnight crockpot porridge/oatmeal for us to awaken to. And boy oh boy, was it worth it! The apple-pie-like smell wafted through to my bedroom before my kids were even able to beckon me to the kitchen. Breakfast was ready to serve and all I had to do was heap the steaming goodness into bowls, add a dollop of apple sauce (or any other toppings you like) and watch my family enjoy it. Here’s the recipe, so you can enjoy it too! (Now, remember that I’m a little loosey-goosey with measurements, so feel free to experiment if you desire a slightly different end result.)
Bonus: This recipe can be Gluten-Free, Dairy-Free, Refined Sugar Free if you use the right oats!
Some possible additions/substitutions if you don’t mind mixing things up a little, could be: maple syrup/honey, berries, flax seeds, natural peanut butter, shredded coconut, etc.
