Clean eating salad


I thought I would share this salad with You guys. I know many are always looking for gluten free, quick healthy options. I found this on Pinterest.

Cucumber tomato salad

What you will need:
2 large cucumbers
4 Roma tomatoes or 2 large
1 medium red onion ( I did without)
Handful of fresh oregano ( I used dry as I didn’t have fresh, fresh would be much better.
1 lemon ( for the dressing)
1 cup kalamata olives
8 ounces of feta cheese
3 table spoons olive oil
1 tsp white wine vinegar
Salt and pepper to taste

I found that because tomatoes and cucumbers are naturally wet this didn’t store well in the fridge for more than a day. I would only make what I need for one meal next time around.

— chop cucumbers, tomatoes olives and cheese in a bowl, mix together ingredients for the dressing combine. Chill for 1 hour for flavors to strengthen. And enjoy!
