When winter is dragging on, your kids are antsy and you are 4 days away from your due date, you seem to have two options…
1. Throw snacks and toys at your children, lock their door and run for cover.
2. Bring out the play-doh set, blast the tunes and bake delicious cookies.
I think my kids were happy I chose option 2 today.
So, if you’re looking for said “delicious cookie” recipe, here goes:
(because you can literally add any extras to these cookies)
1 cup light brown sugar
1 cup white sugar
3/4 cup room-temp butter
1/4 cup coconut oil
2 teaspoons vanilla
2 large eggs
2 cups all purpose flour
1 teaspoon salt
1 teaspoon baking soda
2 cups quick rolled oats
Extras: I used semi-sweet and white chocolate chips today and also added some broken crispy crunch bars.
Other options: raisins, nuts, toffee bits, dried cranberries, flax seeds, peanut butter, etc.
Pre-heat oven to 350F.
In a large mixing bowl combine both sugars and butter until smooth.
Mix in eggs and vanilla.
Separately combine flour, salt and baking soda. Then mix it all together until well blended.
Finally, add oats and extras.
Spoon onto baking sheet with tinfoil and bake for 8-10 minutes.
Remove, let cool and enjoy!!
