There’s just something about this time of year that makes me bust out my crock pot way more often than normal. This past week I did a bit of experimenting with something I found on Pinterest and it turned out so yummy! Even The Bug was begging for more.
What you’ll need:
•2-4 boneless skinless chicken breasts
•1 box stove top stuffing
•1 can cream of chicken soup
•1/2 cup plain yogurt
•1/2 cup water
•1/2 cup Parmesan cheese
Lay raw chicken breasts at the bottom of your slow cooker. Cover with box of stuffing. In a bowl, combine soup, yogurt, and water. Mix thoroughly then cover stuffing with it, ensuring that all the stuffing gets saturated. Cook on low for 4-6 hours until chicken is cooked thoroughly. At the end, take lid off of the crock pot and sprinkle with cheese. Let it cook for 15 or so minutes until it has a nice crust.
I served with a Caesar salad made with baby kale and spinach. Delicious!
