Boy oh boy am I excited about this one. I love coffee. Through 2 pregnancies, and 2 little nursers, I have yet to be able to cut out my morning java. Know what I don’t love? How fatty coffee cream is, and how it makes my tummy feel after the fact. I love making almond milk in my Vitamix, so I thought I would give cream a go! I found this recipe from The Detoxinista and immediately busted out my soaked almonds. I changed the recipe to suit my needs (I like super creamy creamer).
What you’ll need:
- 1 cup of almonds, soaked for 8 hours (or overnight)
- 2 cups of filtered water
- 1 tbsp organic coconut oil
- OPTIONAL: 1 tsp pure vanilla extract
- OPTIONAL: 1 tbs natural sweetener (raw sugar, raw local honey, maple syrup etc)
- nut milk bag
Blend all your ingredients in a high powered blender (such as a Vitamix), until smooth. It took about 1 minute. Strain through your nut milk bag into a large bowl. Pour cream into a sealed glass container. It will last 3-4 days in the fridge so if you don’t think you’ll go through the full 2 cups of cream, half the recipe!
It worked PERFECTLY and tasted so incredibly yummy. I don’t think I will ever buy coffee cream again! From where I buy my nuts, 1 cup of almonds costs slightly under $1 so this is also a great way to save some money!
