Salsa / Pasta Sauce / Bruschetta Topping

I bought a large amount of Ontario grown tomatoes the other day, so needed to do something with them before they went bad. One of my cooking adventures was this recipe. I say adventure because it started out as a salsa recipe attempt and ended up looking more like a pasta sauce and tasting more like a bruschetta topping haha. Needless to say, it could be used for any of those three things and would be quite delicious. I would suggest adding something hotter to the salsa, like a jalapeno pepper, if you like a little more kick. Well, here it is.

You’ll need:



-a variety of peppers



-olive oil

-seasoning (salt, pepper, balsamic vinegar)


chop vegetables and crush garlic
place saucepan on medium heat and add oil and garlic
add peppers and onions and stir
stir in tomatoes and add seasoning (salt, pepper, balsamic vinegar)
chop parsley
add parsley to simmering veggies
for pasta sauce, blend mixture
pasta sauce in re-purposed jar
salsa/bruschetta topping
