This is a delicious, easy and simple recipe! ( my favorite kind)
You will need:
1 cup cooked quinoa ( cook according to package and let cool.)
Add: 1 red pepper, 1 yellow pepper,
4 green onions, 1/4 cup sunflower seeds, 1/2 cup slivered-toasted almonds, 2 celery sticks, 3/4 cup dried cranberries, 3/4 cup chopped apricots ( cut with vinegar)
For the dressing I usually just use oil and balsamic vinegar but u can make your favorite or use store bought.
